Zucchini Fries

This is a fantastic recipe from Nadia Lim and they are in her words 'very addictive and moreish'. But when you have an excess of zucchini they are a great way to get everyone eating their veggies and they are actually baked, not fried. 

Ground almonds 1/2 c

Parmesan- very finely grated 1/2 c

Thyme or rosemary- very finely chopped 1 1/2 tbsp

Salt 1/2 tsp

Egg- 1 lightly beaten

Zucchini- 3 medium sized, not too bendy

Preheat oven to 220 c or 430 f 

Mix almonds, parmesan, herbs and salt in a bowl. Beat egg in separate bowl. 

Trim tops and bottoms from zucchini and then cut each in half. Cut each piece of zucchini into quarters lengthwise, then cut out the core to remove the seeds. Cut each piece into 1 cm thick fingers, just like fries. 

Dip each piece in beaten egg and then in crumb mixture, making sure they are well coated. (to avoid a sticky mess use one hand for egg and the other for the crumbs ) Arrange fries on prepared baking tray and bake for 12-15 minutes or until golden and crisp. 

Serve straight from the oven with your favorite sauce!
