Vegan Green Dressing


At this time of year it is all about the salad! 😍 My spring garden is overflowing with greens and I love making a hearty meal out of salad with a protein and a killer dressing. Check out this great recipe that can be adjusted to suit what you have on hand.

 

🥬💚Vegan Green Dressing💚🥬

 

I love this creamy vegan green dressing that can be modified to include whatever green herb you have in abundance such as cilantro, parsley or basil. 💚The same goes for the nut of choice though cashew will yield the creamiest result. Proportions can also be adjusted to preference and what you have on hand.

 

Green Dressing:

💚1/2-1 cup-  Herb of choice- Basil, Cilantro, Parsely

💚1/2-1 cup- Cashews, Almonds or Walnuts soaked for 1-8 hrs. (Almonds and walnuts will need a longer soaking while cashews being softer will plump up more quickly.)

💚1/2 cup water to get blender going. Use more as needed

💚Squeeze of lemon juice

💚sea salt and/ or maple syrup or honey to taste

💚1 avocado (optional)

 

Simply blend all of this together for a thick and creamy dressing. A high powered blender like a Vita Mix will work best for a smooth finish. Enjoy and let me know if you like it!
