Chocolate Zucchini Cake
Moist and delicious, this chocolate zucchini cake is a family favorite from my mother in law. It can easily be altered to suit your needs or what you have on hand and always seems to come out great.
3 C flour (white, whole wheat, or Gluten-Free)
3 tsp baking powder
1 tsp cinnamon
1/4 c coco powder
2 c sugar (also works with less sugar)
3/4 c oil (olive, vegetable, coconut all work)
3 eggs
2 tsp vanilla
3 c grated zucchini
Mix flour, cinnamon and baking powder and set aside. In mixer beat together coco powder, sugar, oil, eggs and vanilla. Add zucchini and beat together. Mix wet and dry ingredients and bake at 320 F or 160 C for 40 minutes.
